Everyone's Favorite Galley Gourmet Capt. Jan!
As a charter yacht chef and captain, Jan Robinson was constantly being asked for recipes and the secrets to whipping up gourmet meals in “a galley the size of most people’s closets.” In response, she has collected recipes and published a growing series of books.
The recipe for this great hors d’oeuvre is from Sip to Shore; Captain Jan’s collection of cocktail and appetizer recipes primarily from Caribbean charter yacht captains and chefs.
DEVILISHLY GOOD SHRIMP DIP

Preparation time: 5 minutes
Chilling time: ½ hour
Serves: 4
1 (6 ½ oz.) Tin shrimp
1/3 cup Miracle Whip
3 Scallions, chopped
2 stalks Celery, finely chopped
1 tsp. Paprika
4 dashes Tabasco
1 Tblsp. Worcestershire sauce
¼ tsp. Pepper, freshly ground
Garnish: Cucumber rounds
Combine all ingredients. Chill. Serve in a small glass bowl ringed with cucumber rounds. Accompany with goldfish thins, pumpernickel thins, or your favorite cracker.
Note: Can be expanded and garnished as a salad course at lunch.
HINT: Be imaginative in serving dips. Hollow-out red cabbages, lemons, oranges, eggplants, red and green peppers, grapefruit or pineapples to make shells. These make lovely bowls.
